we americans have americanized chinese takeaway which is a lot different than traditional chinese food, the japanese have had their share of japanesing foreign. Google it, there is a whole history of how tonkatsu whas based on shnitzel, british cooks introduced curry which was morphed into a delicious unami japanese kare, and how spaghettie with ketchup and vegetables can still be found in japan today!

  16. light, perferably japanese style, ask chinese style soy sauce has a different taste.

Also dont use Dark soy as its used for color rather than taste.
